    1/4 cup fine semolina (sooji/rava)
    1 tablespoon ginger-green chili paste
    1/2 teaspoon turmeric powder
    1 teaspoon lemon juice
1 teaspoon Eno fruit salt (or 1/2 teaspoon baking soda)
    1 cup yogurt (curd)
    3/4 cup water
    2 tablespoons oil
    1 teaspoon mustard seeds
    1 teaspoon sesame seeds
    8-10 curry leaves
    2-3 green chilies, slit lengthwise
    1/2 cup water for tempering
2 tablespoons chopped coriander leaves (cilantro) for garnish
    Grated coconut for garnish (optional)
    Salt to taste

Directions

  • Gathering the Ingredients
Before we begin our culinary journey, let’s assemble all the ingredients required for preparing Gujrati Dhokla:
Besan (Chickpea Flour), Eno Fruit Salt, Curd, Water
Green Chilies and Ginger Paste, Turmeric Powder, Mustard Seeds, Curry Leaves, Fresh Coriander Leaves Grated Coconut
  • Preparing the Batter
To create the base of our delectable Dhokla, follow these simple steps:

Mixing the Besan: In a large mixing bowl, combine the besan with curd, green chilies, ginger paste, and turmeric powder. Mix well to form a smooth paste, ensuring no lumps remain.

Creating the Flavour Fusion: Add a pinch of asafoetida and a splash of water to achieve the desired consistency of the batter. Remember, a thick yet pourable batter is the key to fluffy Dhoklas.

Enlivening with Eno: Just before steaming, add the Eno fruit salt to the batter and mix gently. The Eno will give the Dhokla its characteristic sponginess.

  • Steaming the Dhokla
Choosing the Steaming Utensil: Select a wide, shallow dish for steaming the Dhokla. Apply oil or cooking spray to prevent sticking.

The Steaming Process: Pour the batter into the greased dish and spread it evenly. Place the dish in a steamer or a large pot with a steamer rack. Cover it with a lid and steam the Dhokla for about 15-20 minutes on medium heat.

The Toothpick Test: To check if the Dhokla is cooked thoroughly, insert a toothpick or a knife into the centre. Your Dhokla is ready if it comes out clean.
  • Tempering the Dhokla
The final touch to elevate the flavours of your Gujrati Dhokla comes from the aromatic tempering. Follow these steps:

Heating the Oil: In a small pan, heat some oil and add mustard seeds. Allow them to splutter.
Infusing Aromatics: Now, add curry leaves and grated coconut to the pan. Sauté until the coconut turns light golden and releases its aroma.

Pouring the Tempering: Carefully pour this aromatic tempering over the steamed Dhokla.
  • Garnishing and Serving
With the last step completed, let’s give our Gujrati Dhokla a visual appeal and serve it in style:
The Art of Garnishing: Sprinkle freshly chopped coriander leaves over the Dhokla, adding a burst of colour and freshness.

Savouring the Dhokla: Gujrati Dhokla tastes best when served with tangy tamarind chutney or spicy green chutney. The harmonious blend of flavours orchestrates a symphony on your taste buds.
